We had the good fortune of connecting with Carlos Loaiza and we’ve shared our conversation below.

Hi Carlos, what principle do you value most?
To me, respect is the most fundamental principle. Coming from a place of respect allows for a safe environment with your family and peers.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
The name Half Rooted comes from the basis of the business, my roots. Being the first Colombian American in the family there was always a lot of pressure on me to make something of the opportunity. I was always being persuaded to going to school and finding something where id be working in an office… but I was always drawn to the kitchen. Its all my mother did and it was a way where we bonded and spent time together. Ive been cooking with her and learning her methods for over 15 years. Throughout all that time I branched off and learned more about the business side of the restaurant world which then has lead to me opening Half Rooted. A modern Colombian street food concept bringing a whole new view on street food. using only quality ingredients, prepping almost everything in house, locally sourcing ingredients, and a creative sense to the food truck world. Half Rooted is a combination on my mothers traditional flavors meeting my modern twist on flavors and business. sharing the love and the passion behind quality food is our main focus. We are now about a year and a half in business and its been no where near easy but I wouldn’t ask for it any other way. Sharing the food we provide and seeing how much people love it makes all the difficulties worth it!

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would most definitely start with an adventure to Rainbow Falls, that is one of my favorite hikes that leads to two different waterfalls. Overall and amazing experience. Regular trips to the Village Grind for coffee, since they are the best coffee shop in town. Great environment and an even better cup of coffee. For dinner we would go anywhere downtown. It has anything you are looking for from Mexican, to sushi, to fast casual, to fine dinning., Downtown is where dinner would happen. Paris Mountain is another cool little spot. Most important place to visit would be one of the locations my business, Half Rooted,m is serving out of.

Who else deserves some credit and recognition?
Overall major credit and appreciation to my family and close friends for always supporting means playing a huge role in my character and mentality. Surrounding myself with people that encourages me to follow my dreams and shoot for the stars has made all the difference.
