We had the good fortune of connecting with Patrick Panella and we’ve shared our conversation below.

Hi Patrick, what’s the end goal, career-wise?
It’s hard to think about the end. I don’t have any plans on stopping what I do because in addition to my professional career, it’s also my hobby and passion. Working hand in hand with my wife contributes to that as well. Our current project has us in Paris opening a wine bar in the 3rd arrondissement. But if I had to think about the end, I think my goal is the same as the beginning. I want to open food and beverage establishments that become institutions of sorts and aren’t just capitalistic enterprises. I’d like the aesthetic side of the businesses to leave a lasting impression. The minute I’m no longer proud of what we’ve created would perhaps be the beginning of the end.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
I think what makes our businesses special is that they are all very narrowly focused. We aspire to do one thing really well as opposed to trying to please everyone by doing a bit of everything. Because of this we are very polarizing. People usually either love us or hate us. We also pride ourselves on not being outworked.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Charleston is a great place to call home. There are so many great restaurants to choose from as well as so much history and architectural beauty. I think we’d spend quite a bit of time walking around the peninsula eating at different spots. I’d probably take my friend to my spots: Chez Nous, Malagon & Bin 152 for lunch or early snacks, and then for dinner we’d go to a few of my favorites: Fig, Vern’s, Chubby Fish, The Ordinary, and Sushiwa to name a few.

Who else deserves some credit and recognition?
My success is dependent upon my incredible business partners: my wife: Fanny Panella; as well as chef Jill Mathias and chef Juan Cassalett; and last but not least, Chris Kellogg, arbiter of good taste.
