We had the good fortune of connecting with Anthony Gaudio and we’ve shared our conversation below.
Hi Anthony, we’d love to hear more about how you thought about starting your own business?
After seeing the popularity of food trucks and the growing need for more, we felt that we would be able to make a big impact in the industry. We saw that there were no food trucks selling Italian cuisine, and being that it was our heritage, it was a no brainer to bring that style of food to the streets with a first class food truck.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Our food truck is one of a kind in many ways, we source only the freshest products, serving hand made fresh pasta with sauces made from family recipes. In fact, we built the food truck ourselves, handle all day-to-day operations, and continue to grow and make an impact in a very competitive market. We would not be able to do all of this without the combined 30 years experience in business including grocery retail, and food and bev. We use that experience every day running the truck, from being customer service oriented, to proper food safety techniques. We hope to reach as many people as possible with our food so they can enjoy the love we put into each dish.
Who else deserves some credit and recognition?
My wife Kandess has been the backbone of our business since it was just an idea. She has supported the idea from day one including but not limited to helping with design of the truck, menu item rollout, web design, and she is single handedly responsible for our social media presence which without, we would not be as successful.
